AI-powered Predictive Modelling to Enhance Food Safety and Reduce Food Waste

With the ongoing geopolitical tensions and conflicts, the current food system is facing disruptions from farming to supply chain. Reducing food waste is gaining the global traction to enhance the food system.
As Singapore imports 90 per cent of its food, cutting food waste would help us reduce the reliance on food imports. This is now possible with our new innovation developed with FRESH@NTU, which uses an AI-powered predictive modelling to monitor food freshness, create a proactive food safety monitoring, lower the energy cost, reduce the generation of food waste, and enhance food security. This work represents the second aspect of our two-pronged strategy in reducing food waste: 1) upcycle food processing side-streams, and 2) reduce the generation of food waste.
Our effort is also part of a broader collaboration with industry including a joint lab with Amazon Web Services (AWS), and possible technology adoption by a number of local supermarket chains.
